Hummus
A great healthy snack - serve with flatbreads or crunchy veg for dipping.
SERVES 4
INGREDIENTS
1x 400g can chickpeas
1 clove garlic
1 small lemon
3 tablespoons tahini
1 tablespoon olive oil
Salt
Paprika for sprinkling (optional)
EQUIPMENT
Knife
Chopping boardColander
Food processor or large bowl and handheld blender
METHOD
1 Drain the chickpeas (reserving the water) and tip into a food processor or a large bowl if you are using a handheld blender.
2 Peel and crush the garlic and add with the juice from the lemon, the tahini and the olive oil.
3 Season with a little salt and then process until really smooth and creamy. If it is too thick, add a little of the reserved chickpea water.
4 Serve with crunchy veg such as carrots, peppers, cucumbers and flatbreads or breadsticks.
